Mash and sparge water for a 5 gallon batch with 12 lb of grain
A 5 gallon batch with 12 lb of grain needs about 3.75 gallons of strike water and 4 gallons of sparge water, 7.75 gallons in total.
That assumes a one hour boil losing 1 gallon per hour and grain absorbing 0.125 gallons per pound. Absorption and boil-off are conventions that vary by system, so measure your own once and the numbers get much better.

- About 4 gallons, once the mash has taken 3.75 gallons and the grain has absorbed roughly 1.5 gallons. Total water for the brew day is around 7.75 gallons. Sparge volume is whatever is left after the mash, so it changes every time your grain bill does.
- Why does grain absorption matter so much?
- Because it is water you never get back. At roughly 0.125 gallons per pound, 12 pounds of grain keeps about 1.5 gallons in the spent grain. Brewers who ignore it consistently finish short of their target volume and end up with a stronger, smaller batch than the recipe intended.
- Is 1.25 quarts per pound the right mash thickness?
- It is the common default rather than a rule. Thicker mashes around 1 quart per pound hold temperature better and favour body. Thinner mashes near 2 quarts per pound convert a little more efficiently and are easier to stir. Anything from about 1 to 2 quarts per pound makes beer.
