How do I match equipment capacity to batch size?
Always leave headspace. A fermenter filled to the brim pushes krausen into the airlock, and a kettle filled to the brim boils over. As a rough guide, a five gallon batch wants a fermenter near six and a half gallons and a kettle of eight gallons or more.
